What to do
- Order a soup, not just the two famous dishes. Stock is the whole cuisine — a serious Shandong kitchen clarifies it repeatedly until the milky version has been swept back to the colour of weak tea, and that is the thing you are being sold.
- Judge it by technique rather than by a menu. Much of what a Chinese kitchen anywhere does — the knife work, the stocks, the vocabulary for heat — was codified here first.
