Jiangnan Xiaolongbao

Xiaolongbao is Jiangnan's compression of soup. The skin is paper-thin, the pleats are a count of craft, and before you bite you pad the heat with vinegar and ginger. Shanghai made it a civic calling card; Nanxiang and Wuxi keep their own broths.

A snack, or the start of a meal

The standard method: into the spoon, a small tear, drink the soup, then vinegar and ginger. It is not a flourish. It is physics. The soup is inside the skin. Impatient people remember the burn.

In Shanghai the dumpling sits with shengjian, white-cut chicken and red-braised pork as another cuisine. The Bund and Lujiazui give the city a skyline; xiaolongbao gives it a morning. You can do both in one day: a steamer before noon, the lights at dusk.

Do not only eat it in a tourist room. Find a tight shop that never stops steaming, and watch the next table finish a basket without talking. That is the daily version.
